Best Egging so far-not sure why there does not seem to be more people doing beef, but this was bitchin!.......
Did 2 Chucks about 3 LBS- Injected beef broth- coated with olive oil, prime rib rub and lipton onion soup mix.
Dome 250-275, wrapped at about 175 and pulled off at around 195 ( wanted to go for a ride) Set my oven at 200, put roast in there while I went out for a couple of hours. Was some of the best Pit Beef I had in a long time......... Pulled most of it , saved some chunks which re heated well

Did you check the final internal temp? I did one Sunday but I don't think I let it ride long enough wrapped. I like the onion soup mix idea!Slumming it in Aiken, SC.
