I love strip roasts. It constantly amazes me how the human eye will find the center.  These had a bit of a fat cap, but nice steaks for every day.

I recycle a lot of trimmings into other things, but never thought about using beef fat for anything.

render into tallow and make soap.

what about the beef love from rendered fat.....the guy that always quoted meathead was all hip on that for scrap fat.  

Great looking cook btw doc, I always stock up on roasts when they are on holiday sales and do this.  My wife cut me off from meat shopping before new years this year.
