I told my buddy that I'd cook whatever he fancied for helping me do some man things around the house. As expected, he chose steak so I picked up some Choice New York Strips from Costco. Just like my father in law, he'd rather eat steak off the egg instead of going to a steak house.
Pretty much the usual, seasoned with S&P...then seared using a Spider and CI grid. I set up my adj rig, then roasted the strips direct above the felt @ 400 till they reached 134 and placed a garlic butter slice on each steak for a 6-8 min rest.
Just a hack that makes some $hitty BBQ....
