Cooking pork butt a day early???

I am having a party on Saturday.  I am not going to be able to cook on Saturday and wondering if I can cook it Friday and let it sit?  Will it taste ok?  I usually wrap it in foil and put it in a cooler when I am done.  I let it sit about three hours and pull it.  Any suggestions?

    I cooked one at home in Tennessee and put it in the freezer. Took it to Ohio 3 days later, put it a 250* oven and it tasted like it was just made. You could probably just do the fridge.

  • Great way to do this is slice it into steaks before reheating. All the goodness of pulled pork without the white trash mess.
