Eggtoberfest 2010 - Grits Cornbread
- 1 cup oil wesson, corn or canola
- 1 cup self-rising flour
- 2 cup yellow corn meal or grits
- 1 small can cream style corn
- 3 tsp baking powder
- 2 cup sour cream
- 3 eggs
- 1 tbls sugar
Mix all the dry ingredients. Add the Eggs, oil, sour cream, mix again. Bake in well oiled 10-12 inch cast iron skillet for 30-35 minutes. Use platesetter in Egg.
Optional: add chopped Jalapeno, green pepper, or apple tidbits for color & flavor. We roll apple bits in cinnamon-sugar mix.
