Your favorite rub/seasoning;
Cut a slit down the center of each knockwurst, open it up, stuff a whole fresh cayenne pepper in & top with cheddar cheese, add seasoning, then tightly wrap in bacon using toothpicks to hold it in place. I cook these indirect at between 350-400 for 30-40 minutes (whenever the bacon is nice & crispy). Best served on a soft roll with a Carolina mustard-based bbq sauce.
