Coming to temp up or down?

What is the best way to get to temp for a low temp cook? Work up to it or come back down to it :huh:

    Yes, it is very hard to bring it down but always easy to bring it up. The one exception is very early in the stabilizing process before the ceramic mass is fully heated, then you can bring it down fairly easy. However, once the mass is fully heated it is very slow to come back down.

    yes. and the fact that "getting a good fire going" doesn't real do anything good for the much smaller fire you actually want
