What is the best way to get to temp for a low temp cook? Work up to it or come back down to it :huh:

Is that because it takes longer to come down?

Yes, it is very hard to bring it down but always easy to bring it up. The one exception is very early in the stabilizing process before the ceramic mass is fully heated, then you can bring it down fairly easy. However, once the mass is fully heated it is very slow to come back down.
