New Year's Butt

NYEve dinner complete, (spatchcocked another pair of hens :)[p]kids inline for the dvd movie of their choice, and a butt
on the egg for an overnight after a day in the fridge with
a short brine and a dry rub. Looks good, 225 on the fire
and setting for 180 on the meat in the a.m.; that done we'll
bring it through 190 in the morning and take it off so there's
room for the abt's for tomorrow's appetizer and pulled pork for dinner. I don't expect the company will complain![p]thanks to the forum for the ongoing ideas and support,
and Happy New Year to all!
