Cant help with the turkey but a large stainless steel bowl under the middle of the brisket gets the ends in and cooks fine.1 · -

Yes. Which is why I cut the bag and dump it into a plastic, water tight tote. However the dust, mess, and general untidyness don't really bother me. =)1 · -
