the skirt steak was probably to thick and not cooked hot enough to soften the fatty tissue. If thick, I cut real thin. If thin, I cut thicker. You locator says Dallas, find a good local mexican groce…1 · -

I did the spiral rib set-up 2005 or so. What I found was hard to sauce or foil. Ribs a little difficult to handle or move around during the cook. Air movement over/through ribs was a little uneven. t2 · -
