Just my 2 cents......I always cook fat side down on both Brisket and Butts......the fat from the top will not run through the meat it will just roll down the sides.....much better bark with fat side …2 · -

I only use Mesquite and never a complaint about flavor.....I just picked up 2, 40lbs bags from our local Business Costco for $25.05 including tax....I think there is way too much hype about charcoal.…2 · -
Just Curious ?
Most of the barbecue I do, I apply no sauce during the cooking or after the cooking. I let people eating the barbecue decide whether they want sauce and what type of sauce.....How many people on this…1 ·
