Keep them adjusted using boiling water to test, but also know that the temp varies quite a but between grate level, dome temp, and right above/around the meat.3 · -

Only thing that can result in higher temps is the oxygen.....it's getting it somewhere. Check your base for cracks and the gasket for leaks.2 ·
