Fat side up. However, on butts I completely remove the fat cap if cooking in the egg and also remove most if egging a brisket.2 · -

Lag 16 is one of my all time favorites. Laphroig 10 is another that is very peaty. Very similar to Ardbeg. Haven’t had Octomore. Will have to keep an eye out for it.1 ·
