For the win. These came out great. Total cool was 45 minutes to get the egg up to 225-250 and stable. 2 hours of smoking. 4.5 hours braising with no lid on the DO. Did not loose much liquid at all. T…1 · -

So far so good. Prepped the veggies and sautéed in the do on the stove. Reduced the wine and broth a little. Amazing aroma. Removed the ribs and the indirect rig. Put in the spider with the CI grate.…1 · -
