I had a nice fresh heritage ham a few years ago. Just rubbed a bit of salt on the exposed meat a day before hand. Was some of the sweetest meat I'd ever had.1 · -

As @CornfedMA said, $8/lb is a great price. If I can find it, Berkshire around me goes for at least $10. Don't bother looking for Ossabaw or Manglitsa unless you want to get a 2nd mortgage. ;)1 · -
