Biggest thing is the cherry you used. Fruit woods and pecan are just not as heavy as say oak and mesquite. Cherry is great for poultry which takes smoke very easily, just not as much on pork.2 · -

If your looking for advice, I will say this. Ditch the pans full of apple juice, or any other liquid for that matter. The egg holds moisture with out any help. And raise the temp a little. 250 to 275…3 · -
