First check the calibration on your thermometer. Sounds like your cooking a little hotter than 275. Which is Ok, I do all my butts at 300 to 325 and they are done in the same time frame you mention. …1 · -

Biggest thing is the cherry you used. Fruit woods and pecan are just not as heavy as say oak and mesquite. Cherry is great for poultry which takes smoke very easily, just not as much on pork.2 ·
