I try to have dome between I try to keep dome around 275 to 300 and usually go for internal between 205 to 210, works great for me every time...I shoot for dome at 275 to 300 and internal temp of 205…2 · -

I just move the ash tool around flat underneath the old lump and my reason is to knock the old ash down to the bottom to scrape it out before the cook.1 · -
