Over the years of watching various Kamado forums I have seen salt blocks come and go. No one seems to cook on them for very long. I would suggest a new version piece of CI or soapstone.1 · -

Weight is better. Being able to rate a scale and dump more in means less measuring cups to wash. That being said, if you are happy with the results and can get consistent bakes do what works.2 · -

If you are looking for smooth surfaces try carbon steel skillets. They have the same seasoning as CI with slightly lighter weight. I have a lodge skillet, and several matfer pieces.1 ·
