    Ok made the roux, not as hard as I thought, but took 25 min. carmalized the onion in the roux per @SGH got everything but the seafood and sausage in the mix simmering now

    I would also just do nothing but 3 butts and skip the ribs. Ribs will most likely go really fast and guests wanting more. Save them for the friends you like well enough to invite over without a crowd.
