Cooking my first Spatchcock tonight.  I want to food direct and based on what I read I want to cook raised direct - not direct @400 for approx 45 minutes to 165 degrees.  What are the risks of direct? Can I cook direct at a lower temp?  If I cook indirect, what temp and time do you recommend? Thanks
