Thanks, @pgprescott. I had just come to the same conclusion. I think I will FTC it for six hours (it is at 199 now so will be soon) until 2pm, then into 200 oven for a few hours. Should be fine.1 · -

@Raymont. No, I actually found the crust/char identical to a reverse sear. When I do a reverse sear I do it at about 250 indirect anyway so all the caramelization happens in the sear, just like with …1 ·
