I think yours is going to be better from the pics. I did not raise it into the dome--only gasket high which is where I normally cook. And I am at 200. I am not going to get the color you did on that…1 · -

I really think it makes a difference. It makes it less bitter--at least to me. and it grabs most of the fat, which normally you have to separate off.2 ·
