You can do either. I'd recommend a hi que grate(or the kick ash basket) if you are still using the regular grate. This fixed my ash issues when I had my medium. You aren't going to overheat…1 · -

This. I brine chops for 2 hours in a simple salt/sugar solution. Then reverse sear or SV. I like adding a glaze at the end. A perfect pork chop is miles better than any beef for me.3 · -
