This, with or with out the reverse sear. Reverse sear after letting it rest to hit with a bit of smoke. Do a bourbon/Dijon/honey glaze with some pecans in the glaze as well. Best meal I've ever…1 · -

You don't need to cross-hatch. Just flip it often and move it around a bunch. You get the best of both worlds- even sear and fire-grilled flavor.2 · -
