Took a peak after two hours at a stable 250 degrees. Hit it with a quick spritz of 50/50 apple cider vinegar and water. Internal temp is at 149 degrees.1 · -

I meant to say above that I did NOT have to remove the dome in order to replace my gaskets with the single Rutland gasket on the bottom.1 ·
