250 degrees is very much low and slow. I think a lot of people make a mistake by thinking that the lower the temp they smoke will make the end result better.1 · -

1. 225 needs to be your grid temp, not your dome temp. Dome needs to be 250-2752. At 250-275 dome it will be in the "neighborhood" of 1.5 hours per pound, but always cook to get done early …1 · -

I've done Cazzy's wings and they are great. Another great recipe can be found on the Dizzy Pig website. The wings are breaded and almost like fried chicken.1 ·
