@pab, I also have the Brod & Taylor and it does a great job and, as you said, it folds up when not needed. Not sure if you knew or not, but they now make an add on tray to double the proofing are…1 · -

I use elastic ones similar to this. https://www.amazon.com/Rotisserie-Elastic-Cotton-Blend-e-Cookbook/dp/B01HR30HT6/ I can truss a chicken in less than a minute. Do use pliers to secure the tines.1 ·
