I am of the camp that packing dates can be ignored. I know a few folks that wet age 6-8 weeks, as long as 100 days no issues fridge temps are important of course1 · -

i think a rib yeye is the best way to go too. i wouldn't advocate aging a smaller roast (unless of course also a rib eye) no eye-round roasts, for example. good luck.1 · -
