I use nothing! After rinsing the brine off the chicken, i allow it to drip dry and season it all the way around - top to bottom. Then allow to sit until the egg gets ready and stabilized..1 · -

Just measure up inside your dome five inches, then measure across to the other side at that same heigth -- re: the diameter across at that heigth. That will give you the maximum diameter the grid can…1 · -
Re: How do you arrange your wood for long smoke?
I use chunks and place them on top of my lump. I use an electric fire starter. I get about 2 to 2 1/2 hours of good smoke, and i believe thats about all the meat can absorb.2 ·
