I do a similar set up and have seen 50 degrees difference in the beginning of the cook. As the cook progresses the temps come closer together to even matching. Seems to be a common occurrence,I guess…2 · -

I usually cook them a little warmer than that 250-270,but not sure that little of themp change will all that much difference. I think you probably have a pretty good plan,maybe ride it out til 11 and…1 ·
