I have found with shrimp, if you think they are done, they usually are. stick with wild caught gulf shrimp, more expensive but only real way to eat 'em now days. t1 · -

When it comes to butts and briskets, I always put the butts on the bottom. Brisket is a more fickle meat, while butts are more forgiving. t2 · -
