Flat Foiled in Cooler - How Long

How long can I keep the flat in the cooler before I need to do something w/ it? I put a 12 lb whole brisket on last night at 7. Pulled it off at 10:30 this morning and removed the flat from the point (point's back on the egg for burnt ends :cheer: ). I was planning on a 3 hour cooler rest for the flat, but that puts me at 2 pm, 4 hours too early for dinner. Do I pop the flat in the fridge at 2 till dinner, or maybe in a warm oven (170-180) until 6? I'm worried about the oven drying the meat out (even though I'll keep it in the foil).

A cooler can keep meat hot for 4 hours or so if it is wrapped in foil and surrounded by blankets, newspapers, etc. If the brisket is tightly wrapped in foil, I would keep it in the oven at 180 until needed. You could also dump a little beef broth in the foil to keep things moist although your bark will soften. The main thing is either keep it above 140 or below 40 to slow the spread of bacteria.

i put a pot of beans in the cooler and its good for over 6 hours, you could put a pot of simmered water in the cooler with the flat. my bean pot goes in a cardboard twelve pack box and into the cooler with whatever im keeping warmfukahwee maineyou can lead a fish to water but you can not make him drink it

The Naked whiz has a chart you can look at. I have a smallish cooler that I can pack with meat and towels and it stay hot for a very long time. I've never tried just a flat though. I do brisket with butts on top and then towels to fill in the extra space.
