This morning I asked for suggestions on pork tenderloin with an apple stuffing. Received several great suggestions, so decided to use something from each one. I butterflied it, smeared it with apricot jam mixed with DP Jamaican Firewalk. Sauteed chopped apples and green onion in butter and added a little Chardonnay at the end. Let it cool and added blue cheese crumbles, walnuts and seasoned with Penzy's Mural of Flavor. Stuffed the tenderloin, seasoned with a smoke rub and cooked direct @ 350.

Had an extra Cornish Game Hen, so decided to make a stuffing for it as well. Baked some bread in the bread machine this morning, cubed some of it, tossed with olive oil and toasted. Used some of the sauteed apple mixture adding walnuts, maple syrup, rosemary, dried cranberries, Mural of Flavor, salt and pepper. Stuffed the hen and roasted it in a small CI pan along side the tenderloin.

Both were good, but I have to say the hen stuffing was the best I've ever made. It would be great with turkey or chicken too.
