Corn husk sausage and a visitor

Got a glimpse of this on FTV the other day, so here's my version.
1 lb. ground pork
Hatch red chile powder, S&P, garlic, allspice, nutmeg,

Mixed, wrapped in corn husks

on indirect at 250 to 160 with a little mesquite


Right in the middle of all this, the neighborhood king buck wandered out


Had a very good smoke flavor, wasnt real happy with the outside, not brown obviosly, next time may pull at around 140, finish direct, any thoughts or advice from y'all would be appreciated.

Looks like a better idea on tv Kendall. Very good try though, and you never know till ya do. I'd prefer a simple and delicious fatty.. Always guaranteed to knock socks off.

Did the sausage pick up much smoke through the husks or did you open them on the egg for any of the cook? -
Dat DEER looks nice.The sausage looks good too.I would loose the cornhusks and just do a fatty.Save dem husks for tamales.

It did,I used mesquite, which I like with red chile, very nice smoke flavor, and the rendered fat drained well, overall wasn't bad, I was expecting the outside to be a liitle more like a fatty, I thought it would be an interesting single serving type of thing.

Was the purpose of the corn husks to provide some flavor, moisture or both? I'm guessing you soaked them first?
There is one thing I like cooked in corn husks..... corn.....

Moisture retention, possibly flavor. They were soaked, apparently there is a BBQ place in KC that does this.

The pronounced brow and brow tines don't look to be generational, but the snout markings do look passed down. That may be his Pa.
