5 Onion soup in the DO

This is a easy recipe that can be used with whatever onions are handy. This time around I used some white,red,spanish, sweet onions and some leeks and shallots.

Getting started with the raws

Everything gets chopped up

Some butter and the onions go on the egg

These got cooked down. Then added some vino and let it go a little more

Finally added the broth and let this go for 5 hours or so on a nice low simmer(dome temp was around 375)

This was the next day after some time to settle

This is as far as I got with the pics. The flu bug hit the house and it got a little nasty. :laugh: :laugh:
Once we felt like eating again, we have inhaled this the last couple of nights at work. It turned out so good with a hint of smoke and a deep rich onion broth. One night we used rosemary/garlic croutons and it really tasted yummy.
Will be making this again real soon and will get a final bowl shot. :laugh: :laugh:

I just used red, white, yellow and a head of garlic, and only 3 hours on the Egg, but that was dead simple with the Cuisinart and sooooo good! Thanks again for the inspiration! Looking forward to the leftovers... ;-) Love that cast iron on the Egg.
