Max turkey thigh,a mini,shout out to AZRP-pic hvy

Bought 2 turkey thighs at the grocery store today and I was going to cook them like I usually cook chicken thighs, raised direct. I checked the forum and saw Mad Max's take and thought why not. Of course I had no mushrooms or anything else in his stuffing so I improvised. Here is my story..
Butterflied and chipolte rub

The filler (roasted corn and poblano salsa)

Stuffed

Rolled (kind of) and in the pan

Egg @ 400, peach and cherry wood. Indirect w/ plate setter

Plated with habanero cranberry chutney, lentils (home made bacon added), broccoli rabe topped with a poached egg

It was very good but I am not sold on the butterflying of meat. I think it thins out the cuts too much. I would almost rather have a whole thigh, or pork tenderloin with the sides. The roll makes for a better presentation but I don't mind a tastier mess. Thanks for the idea Max, it was good stuff.

P.S. The Yankees are up against the ropes and swingin' at air. I new Vlad still had it.

You may not like the taste of rolled as much BUT dang your pics and cooking abilities sure make it LOOK great!! Very very nice job!

wow, that looks great!!... when you butterfly meats, it does make for time adjustments to insure it stays moist though ...i usually make sure there is something to baste it with then (in the case of the turkey thights, butter/drippings). ..but go with what you like!! . ..

Not sure if you throw an orange in your Blue Moon but if you do try a Meyer lemon. It's a mixture of a lemon and orange. Really good.

Yeah Max. I took it off at 175 but not sure my temp was meat or stuffing. It did seem to be universal wherever I put the thermapen. Don't get me wrong it was very good, I think I just rather prefer a big hunk of meat. Thanks for the inspiration.
