Italian Sausage soup

Made this last night, not in the pic 4 carrots & half box small tow tie pasta, The raws:

I went to a cooking class yesterday & this is one of the things we made. I doubled & changed a couple of things:
1 pound Italian sausage (I used Hot semi-dry that I got at the pork center)
1 clove garlic
24 oz beef broth
14.5 can Italian style stewed tomatoes ( I did not have Italian, just added some spices)
14.5 can great northern beans
2 zucchini
2 cups spinach
2 carrots
s&p to taste
Brown sausage with garlic, add carrots, tomatoes & broth simmer 15 minutes
add beans with liquid & zucchini simmer 15 minutes
add spinach simmer 5 more minutes
I added half box small bow tie pasta (cooked)
It is better the next day

Susan that looks good.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.

Looking good there Susan, I am not a big fan of soup but that does look good and of course it has to be good it's I talian.

Susan I'm not particularly fond of soup...but this is another story all those ingredients must taste great...same thing happened in Lake Travis.....not fond of sausages but Molly offered this incredible polydori sausage from Colorado I think & now I'm a convert...

Built our first fire last night in the wood stove, it was so hot in the house this morning I opened the door. It is still 78 in here, have not added any wood since last night :laugh: :laugh: We got some gooooooood wood this year
