The Rain Went Away

After 10 days of daily rain, today was a great day & at the end what better but fire the Egg with a nice sunset

Asked aunt Carola what she would like for dinner & she said Salmon, something with Mango. So I got a nice big Salmon, prepared a sauce using the mango, gimger & habanero sauce as a base, then added onion, honey & cilantro.
Cedar Planked. On the Egg at 300* Dome. Pulled at 145* internal



Served with Italian Cannelloni

For dessert Loren's Mango Ice Cream

I am especially fond of cannelloni, and have a great recipe for it, but never have done it on my Egg. What do you use for wrappers? I've been using lasagna sheets.__________________________________________Dripping Springs, Texas.Just west of Austintatious -

Mickey this is a direct cook, let the plank soaking in water for 4 hrs., I cook my planked salmon at a low dome temp of 300* which is enough to release the cedar flavour & doesn't burn the plank too much. The one I used yesterday had been used once before. Normally use my planks twice, so the food is always in direct contact with the unused plank side. BTW you are going to have to leave your crotches & geta wheel chair because you & i are having some tequilas by the lake... :laugh:

Looks like the weather there was like OK was! Really great cook again Beli but then I expect it out of ya!
Doreen's just not much of a fish eater unless fryed or I would do more myself. Sure wish you had made OK but I know several are going to Texas and a big reason is to meet you. I trust it will be a hoot as well. Just wish I could join in! :woohoo: -
Hi there JL, can't wait to be in Lake Travis I hope those friends are not to disappointed when they meet me :laugh: :laugh: . We have a good friend & she never ate fish of any kind, all that changed when I cooked the planked salmon with bbq sauce,she loved it, now she asks for it anytime she gets a chance. I don't know if Doreen is Texan but it doesn't gat any more texan than bbq sauce..here is the post just in case you want to try it.
