Cooked two spatch cooked chickens tonight and have a ton leftover. Does anyone have a good recipe for Chicken salad?

Whatever you like. I like almonds, mayo, celery, a little onion, and DP Tsunami Spin and a crank or 2 from the pepper grinder for seasoning. Leftover chicken salad is good stuff :-)

Here is one way I like.
Salad, Chicken, Spatchcock, Richard Fl.
INGREDIENTS:
1/2 Spatchcocked Chicken, Cooked, Diced
4 Stalks Scallions, Sliced Thin
2-3 Ribs Celery, Diced finely
1/2 Granny Smith Apple, Peeled, Chopped Fine
1/2 Cup Chopped Walnuts, or nut of choice
Seasoning of choice, I used Indian River Rainbow Pepper and Pixie Dust.
Mayonnaise, To Blend
Procedure:
1 Mix all up and make salad or sammies.

This simple and fantastic. When mixed there are many ways to serve/eat it.

I like to add orange zest, mandarin orange segments, walnuts and celery with mayo lite. Serve on pita halves with red tipped lettuce leaves. I did this for a wedding shower and it was a hit.
