Simple tri tip - heavenly!

Grabbed a 1/2 of a tri tip from the freezer this morning to defrost. Forgot about it until about 4pm. So I just put some DP Cowlick on it, pretty heavily, and let it sit in the fridge for a couple of hours. Let it come to room temp before searing it. Had put a potato and corn on to cook earlier, took them off during the sear. Let the egg come back down to 400 and put everything back on for 20 minutes. All was cooked just perfectly! Add a little sour cream & La Bomba to the tater, yum! Still enough leftovers for sammy's this week.

I gotta try another tri tip. I cooked one like a brisket. It was good, but I see I can cook them direct.
I can't quantify how much I've learned from the forum.

I seared about 90 seconds a side, then roasted for close to 20 minutes. Perfect med-rare. Slicing across the grain is key!

That is usually my "go to" recipe, but was kind of lazy today. The oil/vinegar mop along with his rub is a nice balance. -

Very nice. How does white wine go with tri tip?

Actually it went quite well tonight. The fiance has had a problem w/headaches from red lately, so went with a chardonnay tonight. The spice on the tri tip went well with the smoothness of the white wine.

I'll have to give the Chard. a try on my next tri tip. I understand about the sulfates in red wine can give headaches and I always thought it was the amount I would drink :P
