Morning Eggheads.
Made some bread last night, it was fantastical. Yes, fantastical. Served with 'sgetti and turkey meat balls. I did not make this in the egg, mainly because i was watching Ryan (7 months old now!!! :woohoo: ) and it was raining. But i thought i'd share anyway. This is Artisan Bread in 5 Mins a Day master recipe. This is the second time i have made this, and it turned out much better than the first. I think the first time i didn't use enough flour.

Ain't she perty???

Baked at 450 in covered DO for approx 20 ish mins, then uncovered for 5 to get nice golden brown crispy crust..

Pulled around 200*, rest...

Bottom looks good!

This bread was so good it didn't even need any butter. But i put some on anyways.
Thanks for looking. I think this was the best bread i've made so far. I know, it would have been better on the egg.
. Sorry, just didn't have time to egg last night while trying to feed and entertain the boy....
The lighting was kind of bad, sorry for the crumby pics. :woohoo:

Looks AWESOME!!!
I've made that recipe myself several times. Love the flavor - never lasts longer than a day or two.
But, each time I've made it, it seems too moist on the inside. We tried cooking longer, but still no better. My question is whether you think the DO makes a difference in the end product.

Ok first thing, I agree if you have top watch a 7 month old that comes first. But rain should NEVER interupt an egg cook!!!! :laugh: Just busting!

The only way i've ever made bread is in a DO so i can't really comment on how it tastes compared to not using a DO... Although i don't find that the bread is overly moist. It has a nice crust (slightly crispy without being rock hard) and a nice, soft interior.
Are you cooking your bread according to time or temp? In other words you should be looking for i think 200-210* for bread. Hope that helps. -
