Hey guys,
Just a quick question. We have gathered a pretty good mess of dove over our past few hunts. Anyone ever smoked them? If so please advise. Thanks in advance

I prefer them cooked hot and fast. They'll get tough and a bit of an off taste if you cook them too long.
Batter fried is always a good option.
Bacon wrap the boneless breasts and put 4-5 on a skewer. Baste with a mildly sweet bbq sauce. -
They are fantastic smoked. Marinate them in Italian dressing, wrap in bacon, then smoke them to no more than mediun rare, my mouth is watering thinking about the ones I'm cooking this weekend. We killed about 400 yesterday afternoon, having gumbo, and smoked doves this coming weekend for another great Sat. of college football.

400? I'm jealous! I want to hunt where you hunt. We can only take 15 a day. Of course, I shoot at well over 400 to get my 15.

I do mine like Antmara's only thing different is that I put a chunk of Spicy (or mild for the lightweights) Link Saugage in the chest cavity. Also cook more Medium that Medium rare. They are flat fit to eat this way.

do you smoke them indirectly I assume? What temp do you usually get the egg to?

:laugh: Yeah, we can only kill 15 per day too, we had 20 or so guys shooting, and most of them didn't adhere to the limits. I know one guy shot about 70 of them. Me, and the guy that invited me brought home well over 100 breasts, gonna cook them this weekend as a beginning of our patio tailgate party. Also cooking a huge pot of gumbo for the night game, watching my dogs (MSU that is) take on them bayou bengals.

I'm thinking about filleting the meat off the bone, and wrapping some of them in bacon with a slice of jalapeno. I've donr this with duck breasts before, and it was good.

I marinate in a taco seasoning and then ABT's are a good way to cook these fast buggers.

Indirect about 300-325 - should not take too long unless you pile them in - about 30-45 minutes.
