Here is the first of several cooks this weekend for the Florida mini fest. 10 pounds smoked seabass,dolphin, sword fish,cobia. 6 hours 200-225F indirect with salt rub, carambola(star fruit)/mesquite wood heavy. Will see you'll sunday or monday if the LONEY KING does not get fed to the sharks. Have a great weekend. Now off to the adult beverage store.

Looks tasty. How were all those fish smoked? I'm guessing good. Everything tastes good smoked right.

Large BGE, plate setter legs up, elbow spacers, metal pan 1 inch water. 2 racks fish .every hour or so rotated the top and bottom layers as the bottom near the water was getting poached not smoked like the top. Sprinkled fish with kosher fine salt top side only. Might have brined them overnight but had no time.
