I just had the best medium rare sirloin steak ever and forgot to take pics.
A little Adolfs unseasoned forked in with olive oil on top of that. 650* for 90 sec,flip, 90 sec, flip, and then the vents closed for another 90 sec.
It was the best I ever had. These were about 3/4" steaks. They sure made up for the last batch of ribeye's that I screwed up.(Cooked them too long, I think)
I love the B.G.E.

Sounds good! I'm a little surprised you use meat tenderizer. You very rarely see it mentioned here on the forum. I have just started playing with McCormick's unseasoned and have been impressed. I have used it twice now on rib eye steaks and have learned to use it sparingly and to apply it just before cooking, it is surprisingly effective. I agree, I am getting some of the best steaks in a long time. The steaks I have been getting at Sam's all year have been on the tough side and it is nice now to have a tender, juicy steak. I am looking forward to trying it on some of the cheaper cuts of meat.

I use a McCormick one that comes in a little packet. You mix it with oil and acid(they say oil and vinegar) but I use wine or fruit juice sometimes. I buy blade or cross-cuts when they are on sale and marinate them for a couple of days and they are beautiful. Learned that trick from my mom.

The way I cook, I need all the help I can get.
I use it on all my steaks. Not just Adolfs. I put on very thin layer,then make a bazillion holes in both sides. It works.

The fault may not all be yours funk, I'm not sure the steaks are as tender as they used to be. At least that is the impression I am getting. When I was a kid we raised Black Angus and ate all cuts of steaks till the cows came home and it was always good stuff. My Dad was Master of the Hibachi. Before I got the egg a couple years ago all I had was a little Weber Smokey Joe that turned out great steaks. Now some of the Porter House and Strip steaks I have been getting are a good chew. I look forward to playing with the meat tenderizer.

Specially depression era Moms. Back in the day, when there was no Sunday shopping and there were real butchers, she would go in to the shop at five to six on Saturday afternoon and offer them 50 cents a pound for whatever they had in the display. Man we ate well!
