I was at whole foods tonight getting ground Bison and saw they have several other cuts available. Are Bison steaks worth the price? The fillet was $27 a pound. Also, with the low fat content I am guessing these need to be cooked indirectly at fairly low temps (300-350?)

cook hot and fast direct at high temps, and do NOT cook them past medium rare at the worst.

Treat it like venison or moose. Hot and fast. As stike said do not go past medium rare if you have to get that far.

$27 a pound. Live lobster is a bargain compared to that. I had a bison steak out west several years ago and it was great, but I wouldn't pay $27 a pound for it.
