Pimento Chips or Chunks

Were would I be able to pick up some pimento chips or chunks for the egg?

Jolly Bill: Don't know what part of the country you are in, but have never heard of pimento wood (but, we are in Florida). Hopefully somebody will have some info for you.

Pimento wood is what they use in Jamaica to smoke Jerk chicken, mon. It is from the same bush that Allspice berries grow on.
Throwing in a small handful of allspice berries is a pretty good substitute, I am told.
I have looked for pimento wood in the past, with no luck at all, so I tried the berries. They added a distinct flavor, but I have no idea whether it was a true jerk taste, or not. I was using Walkers Wood rub and Walkers Wood jerk sauce, so that part should have been authentic.

I have been told that the Jamacians in the Miami area grow the trees. Pimento=allspice. You never did ask me what cost 1 chinese cleaver etc.

Walkerswood is about as authentic as it gets. A ire mon gave me a recipe that uses just this paste.
