Brisket jerky - point or flat?

I going to grind my own brurgers frm brisket and i will have a decnt portion of the whole brisket leftover. I want to try doing jerky on my small and was wondering which is best for Brisket jerky - point or flat?

    Strips from the flat stay together better. Slice it against the grain for a more tender jerky, and with the grain if you want a more chewy product.
