Put some chicken breasts in a vacuum bag last night with plain yoghurt. I was planning butter chicken or curry. Didn't have all the spices I needed so decided on egged "fried" chicken. No bread crumbs or cornflakes. Found a box of ritz crackers and ground them up with pepper, onion flakes, garlic powder, cayenne and dried thyme.
Went to do the egg wash and no eggs. Put a pan on the egg with olive oil and dredged the breasts in the ritz crumbs. Fried the breasts til the coating set.

Grilled themon a raised grid.

Served with an asparagus and fresh pea rissoto

Wasn't too bad.
